These bars are perfect for anyone looking for a protein filled dessert after a workout or for a lazy afternoon snack. The standout ingredients in this dish include oats, chocolate and peanut butter.
No baking is required and the most work you will have to do involves melting the butter and combining the ingredients. Honestly, the hardest part will be waiting for the bars to set in the fridge before enjoying them one after another.
You can also freeze the bars and enjoy them throughout the holiday season. Just bring to room temperature before serving.
- 1 cup butter
- ½ cup packed brown sugar
- 1 teaspoon vanilla extract
- 3 cups quick cooking oats
- 1 cup semisweet chocolate chips
- ½ cup peanut butter
Grease or line with parchment paper a 9×9 inch pan.
In a large saucepan over medium heat, melt the butter. Stir in the brown sugar and vanilla and mix in the oats.
Cook over low heat for two to three minutes to make combining the ingredients easier.
Once well-blended remove the mixture from the heat. Spoon in a good portion of the mixture into the pan. You’ll want to leave about 1/3 of the mixture in the pan for the final layer.
Using a greased piece of parchment paper, press the mixture into the pan until the bottom is evenly covered. Set aside.
In a double boiler (glass bowl over simmering water in a saucepan on low heat) melt the chocolate and peanut butter and stir regularly until smooth.
Remove from heat and pour over the mixture pressed in the pan.
Once spread evenly, take the remaining oat mixture and crumble over the top of the melted chocolate and peanut butter.
Cover and refrigerate for at least 2 to 3 hours or overnight.
Cut into squares and enjoy!
