Cooking with U: Key Lime Pie

While this sweet treat has summertime written all over it, you do not have to give up on it just yet!

Key lime pie is a great afternoon or after dinner dessert that can satisfy anyone’s sweet tooth, but the pie is not too rich that you need to take your belt out one notch after enjoying it.

This recipe is pretty straightforward and a real crowd pleaser! This recipe comes with help from Epicurious with rave reviews!

Ingredients

  • Crust
  • 1 ¼ cups crushed graham crackers
  • 2 tablespoons sugar
  • 5 tablespoons melted butter

Filling

  • 1 (14-oz) can sweetened condensed milk
  • 4 large egg yolks
  • ½ cup plus 2 tablespoons fresh key lime juice

Topping

  • ¾ cup heavy cream

Directions

Preheat oven to 350°F. Once graham crackers are crushed combine with sugar and butter in a bowl and stir until well combined.

Mold and press the mixture into the bottom and into the sides of a 9-inch pie plate (preferable glass). Bake the crust for 10 minutes and cool completely. Leave oven at 350°F.

In the meantime, whisk together the condensed milk and egg yolks until combined and add in the juice and whisk until thickened. Pour filling in the crust and bake for 15 minutes. Once done, cool the pie completely and let set in the refrigerator overnight or for at least 8 hours.

Before serving to your lucky guests, beat the heavy cream in a bowl with an electric mixer until stiff peaks. Serve a little scoop on top of each slice and garnish with lime zest or slices if desired. Makes approximately 8 servings.
